rolled oats

flax seeds, ground

almonds, chopped

Carnation Breakfast Essentials® Original Nutritional Drink Mix (Classic French Vanilla flavor)

1 tbsp

cinnamon

2 tsp

baking powder

¼ tsp

sea salt

2 tsp

vanilla extract

medium banana, mashed

3 tbsp

peanut butter, or nut free alternative

½ cup

fat free skim milk

1 tbsp

coconut oil, melted

3/4 cup

blueberries, fresh

1 cup

strawberries, sliced

Directions

  1. Heat oven to 350F. Generously grease an 8x8 baking and line with baking paper. Set aside.
  2. In a large mixing bowl, combine oats, flax seeds, almonds, Carnation Breakfast Essentials Original Powder Drink Mix (Classic French Vanilla flavor), cinnamon, baking powder and sea salt.
  3. In a medium bowl, whisk the vanilla, eggs, mashed banana, milk, and melted coconut oil. Pour wet mixture into dry, stirring to combine. 
  4. Fold in strawberries and blueberries.
  5. Transfer to the baking dish, and spread in an even layer, topping with additional berries, if desired.
  6. Bake for 30-40 minutes, or until set.
  7. Slice into bars.
  8. Enjoy!
